YELLOW DAL CURRY


Prep time: 10 minutes / Cook time: 7 to 8 hours on low
Flavorful and fragrant, tasty and filling, dal makes a nutritious,
healthy, inexpensive, and satisfying meal. It has a hearty
foundation of tender yellow split peas and the aroma of Indian
spices will greet you when you open the lid of the slow cooker.
Serves 6 to 8
2 cups dried yellow split peas or lentils, rinsed
5 cups Savory Vegetable Broth (here), or low-sodium vegetable broth
1 (14.5-ounce) can no-salt-added crushed tomatoes
1 onion, diced
4 garlic cloves, minced
2 tablespoons finely chopped fresh ginger
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
Freshly ground black pepper
1. Combine all the ingredients in a 6-quart slow cooker. Cover
and cook on low for 7 to 8 hours until thickened.
2. Serve warm over hot rice, if desired.
