This budget-friendly veggie fajita dish is sure to be a family hit.
Black beans, peppers, onions, and tomatoes slow cook in
traditional fajita seasonings so that when you get home you simply
serve with flour tortillas and your favorite toppings. Bold flavors
don’t require a fat wallet!
1 (15-ounce) can black beans, drained and rinsed
1 (14.5-ounce) can fire-roasted tomatoes
4 medium red, orange, or yellow bell peppers or a mix, sliced
1 large onion, sliced
1 (4-ounce) can green chiles
4 garlic cloves, minced
1 tablespoon extra-virgin olive oil
1 tablespoon ground cumin
1 teaspoon dried oregano
Freshly ground black pepper
1. Combine all the ingredients in a 6-quart slow cooker. Cover
and cook on low for 7 to 8 hours.
2. Serve hot.

MAKE-AHEAD: You can prep and freeze part of this meal ahead of time
by combining the sliced peppers, onions, garlic, beans, and spices and
storing them in a freezer-safe bag. The night before you want to eat your
fajitas, take the bag out of the freezer and thaw it in the refrigerator
overnight. In the morning, simply add the veggie mix to the slow cooker
along with the tomatoes, chiles, and oil.
