VANILLA PEAR CRISP

This slow cooker vanilla pear crisp is packed with the delicious
flavors of figs, apple, vanilla, nutmeg, and cinnamon. With its
contrast of soft-cooked fruit and crunchy oat and nut topping, this
healthy dessert pairs nicely with a cup of hot cider.
Serves 6
5 pears, chopped (peeling is optional)
1 apple, chopped (peeling is optional)
½ cup finely chopped dried figs
⅓ cup loosely packed brown sugar
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
1 teaspoon ground nutmeg
½ cup whole-wheat flour, divided
1 cup old-fashioned oats
¼ cup honey
2 tablespoons coconut oil
1. Put the pears, apple, and figs in a 6-quart slow cooker.
2. In a small bowl, combine the brown sugar, cinnamon, vanilla,
nutmeg, and ¼ cup of flour. Pour this over the fruit and stir to
combine.
3. In the same small bowl, combine the oats, remaining ¼ cup of
flour, honey, and coconut oil. Spread this mixture on top of the
fruit.
4. Cover and cook on low for 4 to 5 hours, until the fruit is soft.
5. Serve warm.
