PUMPKIN PIE OATS

Hearty and packed with fiber, this nutritious twist on a classic fall
favorite will have the most heavenly pumpkin pie scents wafting
through your house. Serve sprinkled with a tablespoon of ground
flaxseed for a dose of heart-healthy omega-3 fatty acids!
Serves 7
2 cups uncooked steel-cut oats
8 cups unsweetened almond milk
1 (15-ounce) can pumpkin purée
1½ tablespoons pumpkin pie spice
1½ teaspoons ground cinnamon
⅓ cup brown sugar
1 cup unsalted pecans, chopped
1. Combine the oats, almond milk, pumpkin purée, pumpkin pie
spice, cinnamon, and brown sugar in a 4- to 6-quart slow cooker
and mix well.
2. Cover with a lid and cook on low for 8 to 9 hours. Stir well and
serve warm, topped with pecans.

COOKING TIP: Depending on your slow cooker, your oats may still be
slightly soupy. They will quickly thicken as they cool. Reheat with a
splash of milk in the microwave for 2 to 3 minutes, mixing halfway
through.
