PERFECT SWEET POTATOES
Prep time: 5 minutes / Cook time: 7 to 8 hours
Packed with vitamins, minerals, and fiber, sweet potatoes can be
incorporated into breakfast, lunch, and dinner. Eggs and sweet
potatoes? Delicious. Barbecue chicken over sweet potatoes with a
bit of avocado? My absolute favorite. Mashed sweet potatoes?
Arguably better than traditional mashed taters. Get creative!
6 sweet potatoes, washed and dried
1. Loosely ball up 7 or 8 pieces of aluminum foil and place them
in the bottom of a 6-quart slow cooker, covering about half the
2. Prick each sweet potato 6 to 8 times with a fork. Individually
wrap each potato in a piece of foil and seal it completely. Place the
wrapped sweet potatoes in the slow cooker on top of the balls of
3. Cover and cook on low for 7 to 8 hours. Use tongs to remove
the sweet potatoes from the slow cooker. Allow the potatoes to
cool slightly, then unwrap from the foil. Serve hot.
