LIMA BEAN CASSEROLE

Prep time: 5 minutes, plus overnight to soak / Cook time: 7 to 8 hours on low
Sometimes called “butter beans” because of their starchy yet
buttery texture, lima beans have a delicate flavor that complements
a wide variety of dishes. This meat-free version pairs this nutritious
bean with sweet potato, tomatoes, and carrots. It’s delicious served
with some homemade cornbread.
Serves 8
1 pound dried lima beans, soaked overnight
1 (28-ounce) can no-salt-added tomatoes, diced
1 cup finely chopped sweet potato
1 medium carrot, finely chopped
1 onion, finely chopped
4 garlic cloves, minced
1 tablespoon dried mustard
½ teaspoon freshly ground black pepper
2 cups water
1. Rinse the soaked beans in cold water and drain.
2. Put the beans in a 6-quart slow cooker along with the tomatoes,
sweet potato, carrot, onion, garlic, dried mustard, pepper, and
water. Be certain that the water fully covers the ingredients; add
more if needed. Stir to combine. Cover and cook on low for 7 to 8
hours.
3. Serve warm.

SUBSTITUTION TIP: For a more traditional nonvegan lima bean recipe,
replace the sweet potato with 1 cup of diced ham, turkey ham, or chickenand-
apple sausage.
