HOMEMADE KETCHUP

HOMEMADE KETCHUP

Prep time: 5 minutes / Cook time: 7 to 8 hours on low
This recipe is such a simple way to make fresh ketchup. It can be
customized to your taste, yet takes very little work. Just a few
ingredients like tomatoes, spices, honey, and sugar placed into your
slow cooker for several hours produces a big batch of ketchup that
you may find yourself putting on everything!
Makes 3 to 4 cups
4 pounds tomatoes, seeded and chopped
⅔ cup apple cider vinegar
½ cup chopped onion
¼ cup brown sugar
1 teaspoon smoked paprika
1 teaspoon garlic powder
½ teaspoon celery seed
½ teaspoon freshly ground black pepper
½ teaspoon salt
⅛ teaspoon ground mustard powder
1. Combine all the ingredients in a 6-quart slow cooker. Cover
and cook on low for 7 to 8 hours or until the ketchup has reduced
and thickened.
2. Use an immersion blender or transfer to a food processor or
blender to purée the ketchup to your desired consistency.
3. Place the ketchup in resealable jars or other airtight containers.
Cool completely, then seal and refrigerate.
