CRUSTLESS APPLE-BLUEBERRY COBBLER

BLUEBERRY COBBLER

Prep time: 15 minutes / Cook time: 2½ to 3 hours on high or 5 to 6 hours on
low
The slow cooker is a great tool to use to make desserts, which is
something many people don’t know. In this dessert, the dried
blueberries plump up with the juices from the apples and the
cornstarch thickens the whole thing into a masterpiece.
Serves 6
½ cup sugar
2 tablespoons cornstarch
½ teaspoon ground cinnamon
3½ pounds apples (about 8 large) peeled, cored, and cut into ¼-inch slices
1¼ cups dried blueberries
1½ cups low-fat vanilla Greek yogurt
1. In a 4- or 6-quart slow cooker, combine the sugar, cornstarch,
and cinnamon. Add the apples and blueberries and mix well to
coat.
2. Cover and cook on high for 2½ to 3 hours or low for 5 to 6
hours.
3. Serve hot with ¼ cup yogurt on top of each serving.
