CREAMY BANANA FRENCH TOAST
Prep time: 10 minutes / Cook time: 4 to 5 hours on low
You don’t need to limit yourself to making slow cooker oats or an
eggs-and-potato casserole for breakfast. This easy, creamy, and
nutritious banana French toast recipe will shake up your morning
routine with fiber-rich bread and potassium-rich bananas. Simply
plate the French toast and drizzle with your favorite syrup or sauce.
Nonstick cooking spray
12 (1-inch) slices wholewheat baguette
4 large eggs
¾ cup low-fat or fat-free milk, or unsweetened almond milk
1 tablespoon brown sugar
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
2 ripe bananas, sliced
Juice of ½ lemon
2 tablespoons dairy-free or trans fat–free soft margarine or coconut oil,
½ cup chopped walnuts or nut of choice
1. Spray the bowl of a 6-quart slow cooker with the cooking
spray. Arrange the baguette slices on the bottom of the slow
2. Whisk together the eggs, milk, sugar, vanilla, and cinnamon.
Pour this over the baguette slices, making sure to cover each slice
completely with the egg mixture.
3. In a medium mixing bowl, cover the banana slices with the
lemon juice, tossing to coat. Place the banana slices atop the
baguettes in the slow cooker. Drizzle with the melted margarine
and sprinkle with the walnuts. Cover and cook on low for 4 to 5
hours, or until cooked through.
4. Serve warm.
