CHICKEN TORTILLA SOUP

With 15 minutes of prep time, this slow cooker chicken tortilla
soup is incredibly flavorful and hearty; it’s perfect for chilly days.
Loaded with healthy ingredients, including ample amounts of
protein from the chicken and fiber-rich beans, this soup will keep

Serves 6 to 8
1½ pounds boneless, skinless chicken breasts
6 cups Chicken Stock (here) or low-sodium chicken broth
1 (14.5-ounce) can black beans, drained and rinsed
1 (14.5-ounce) can whole kernel corn, drained and rinsed
1 (14.5-ounce) can no-salt-added diced fire-roasted tomatoes
3 garlic cloves, minced
1 medium onion, finely chopped
2 bell peppers (any color), chopped
1 tablespoon chili powder
2 teaspoons ground cumin
¾ teaspoon smoked paprika
¼ cup freshly squeezed lime juice
Optional toppings: tortilla strips or chips, diced or sliced avocado, diced fresh
tomatoes, shredded cheese, chopped cilantro, or sour cream
1. Put the chicken, stock, black beans, corn, tomatoes, garlic,
onion, bell peppers, chili powder, cumin, and paprika in a 6-quart
slow cooker and stir to combine. Cover and cook on low for 7 to 8
hours, until chicken is tender and cooked through.
2. Remove chicken and use two forks to shred it. Return chicken
to the slow cooker and stir in the lime juice. Cook until the chicken
is heated through again.
3. Serve warm with toppings such as tortilla strips or chips, diced
or sliced avocado, diced fresh tomatoes, shredded cheese, chopped
cilantro, or sour cream, if desired.
