CHERRY CHOCOLATE CAKE

CHERRY CHOCOLATE CAKE

Prep time: 10 minutes / Cook time: 2 to 2½ hours on low
Cake in a slow cooker? You bet. This delectable cherry chocolate
cake has a decadent fudgy taste, but the use of nutritious
ingredients keeps the calories and unhealthy fats in check. Easy to
prep with basic pantry ingredients, this cake is too scrumptious to
resist.
Serves 12
Nonstick cooking spray
1 cup unsweetened cocoa powder
1 cup oat flour, whole-wheat pastry flour, or all-purpose flour
1 cup unsweetened dried cherries
¼ cup ground flaxseed
2 teaspoons baking powder
¼ teaspoon salt
2 tablespoons extra-virgin olive oil
1 large egg
2 large egg whites
1 tablespoon vanilla extract
½ cup granulated sugar
½ cup nonfat vanilla Greek yogurt
¾ cup low-fat or fat-free milk, or plant-based milk, divided
1. Lightly coat the inside of a 6-quart slow cooker with the
cooking spray.
2. In a medium bowl, whisk together the cocoa powder, flour,
dried cherries, flaxseed, baking powder, and salt.
3. In a separate medium bowl, whisk together the oil, egg, egg
whites, and vanilla. Add in the sugar, yogurt, and ¼ cup of milk,
mixing thoroughly until no lumps remain. Add the flour mixture
and remaining ½ cup of milk, stirring until just combined and
incorporated.
4. Spread the batter in the slow cooker. Cover and cook on low for
2 to 2½ hours, or until the center no longer looks moist and feels
barely firm to the touch. Remove the lid, turn off the slow cooker,
and cool the cake in the ceramic bowl for 15 to 20 minutes before
carefully turning it out onto a wire rack to cool completely.
5. Cut into 12 slices and enjoy.
