APRICOT-GINGER BROWN RICE PUDDING

Prep time: 10 minutes / Cook time: 5 to 6 hours on low
Slow cooker brown rice pudding is simple to make and a delicious
fiber-rich dessert that you can feel good about eating. Dried
apricots lend their natural sweetness to this recipe so you need less
added sugar. This pudding is also easy to customize with your
favorite spices, dried fruits, and nuts.
Serves 6
3½ cups low-fat or fat-free milk, or plant-based milk
⅔ cup brown rice
⅔ cup finely chopped unsweetened dried apricots
¼ cup honey
1 teaspoon ground ginger
1 teaspoon pure vanilla extract
1. Combine all the ingredients to a 6-quart slow cooker. Cover
and cook on low for 5 to 6 hours, until the rice is cooked and the
pudding is thick. If the pudding is too thick, stir in additional milk;
if it is too thin, continue cooking until your desired consistency is
reached.
2. The pudding can be served hot, warm, or chilled. Garnish with
a dollop of Apple Butter (here) or a sprinkle of sliced almonds, if
desired.

VARIATION TIP: You can also cook this in light canned coconut milk
for a creamier consistency. Just note that doing so will increase the calorie
