ALMOND RICE BREAKFAST PUDDING

Prep time: 10 minutes / Cook time: 6 to 8 hours on low
Brown rice makes a warm, filling, and nourishing breakfast. Many
other cultures incorporate this healthy grain into breakfast. By
omitting eggs, cream, and large amounts of sugar, this lightly
sweetened breakfast pudding is an energizing alternative to your
standard breakfast.
Serves 8
Nonstick cooking spray
6 cups low-fat or fat-free milk, or plant-based milk
2 cups long-grain brown rice
1 cup raisins
1 ripe banana, mashed
1 tablespoon honey, maple syrup, or sweetener of choice
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
½ cup chopped almonds
1. Spray the inside of a 6-quart slow cooker with the cooking
spray. Combine the milk, rice, raisins, banana, honey, vanilla, and
cinnamon. Cover and cook on low for 6 to 8 hours.
2. Serve hot. Top the rice with the chopped almonds and
additional milk and sweetener, if desired.

VARIATION TIP: For additional heart-healthy omega-3 fatty acids and
